Soul of Sake 2 Year Anniversary with Nanbu Bijin

On June 17th, we will celebrate Soul of Sake’s 2 Year Anniversary! Along side with Jessica Joly our host we will welcome Nanbu Bijin – Southern Beauty famous Toji masters Matsumori san and Tama san to join us for the evening.

The Tokubetsu Junmai is Nanbu Bijin’s signature sake. It is a beautifully balanced sake that can be enjoyed on its own or paired with fresh seafood such as oysters! Highly fragrant and a rich mouth-feel, with notes of melon and orange. It has a soft acidity, but still has a strong structure with solid avors. It is made with Gin Otome rice, a local rice cultivated in Iwate prefecture. “Tokubetsu” means special, and this sake is certainly just that. It is actually polished to 55% so can be considered a ginjo sake, although the brewers chose to label it simply Tokubetsu Junmai.
Nanbu Bijin Brewery, located in Ninohe city, Iwate Prefecture, was founded in 1902.This area of northern Japan is blessed with beautiful natural reserves–pristine ground water, two national parks, and a lake. Nanbu 南部 literary means “southern”, but the actual meaning stems from the traditional name of the region. Bijin 美人 means “beautiful woman” and is derived from the brewery’s mission to produce clean, beautiful sake.
